Frequently asked questions

About CITREVE

Learn about CITREVE, our process and what makes our products different.

Is CITREVE only a garnish company?

No. While our citrus slices make beautiful garnishes, CITREVE products can also add flavor, color, aroma and texture to drinks, foods, desserts and recipes. They can be rehydrated, infused, crushed or ground into powder.

Who is CITREVE designed for?

CITREVE is made for both professional and at-home use. Our customers include restaurants, bars, hotels, caterers, cafés, bakeries, event professionals, retailers and home creators looking for convenient and versatile ingredients.

Where are CITREVE products made?

CITREVE products are hand-prepared and freeze-dried at our facility in Utah.

What does “CITREVE” mean?

The name CITREVE combines the ideas of citrus and revival. Our products give fruit a new, longer-lasting form while allowing it to revive and rehydrate when added to liquid.

How is CITREVE made?

Each product is carefully prepared by hand before being fully frozen. It is then placed into a freeze dryer, where a combination of low pressure and gentle heat allows the frozen water inside the product to transition into vapor. This removes moisture without relying on the higher temperatures used in traditional dehydration.

Is CITREVE made from real fruit?

Yes. CITREVE products begin with real fruit and produce. Freeze-drying removes the moisture while helping preserve the product’s natural shape, color, flavor and aroma.

What is CITREVE?

CITREVE creates chef-curated, freeze-dried citrus, fruit and specialty ingredients for beverages, food, hospitality and everyday use. Our products provide the flavor, color and visual appeal of real fruit in a shelf-stable format that requires no washing, slicing or refrigeration.

Frequently asked questions

Products & Ingredients

Find information about ingredients, natural variation and product characteristics.

Where does CITREVE source its fruit?

We carefully select produce based on quality, appearance and availability. Sourcing may vary by product and season. Contact us if you need specific sourcing information for a wholesale, foodservice or purchasing requirement.

Are the citrus peels edible?

Yes. Our citrus slices include the peel, which contributes natural citrus oils, aroma, flavor and structure. Citrus peel can have a pleasantly bitter or concentrated flavor, particularly when eaten dry.

Are CITREVE products meant to be eaten or are they only decorative?

They are fully usable food ingredients, not decorations. They can be eaten dry, rehydrated, infused into beverages, incorporated into recipes or ground into powder.

Can I eat CITREVE directly from the jar?

Yes. CITREVE products can be enjoyed dry for a light, crisp texture or added directly to drinks and recipes. Some products are naturally more tart, bitter or intensely flavored when eaten dry than they are after rehydrating.

Are CITREVE products gluten-free?

CITREVE products are made without gluten-containing ingredients and in a facility that does not process anything containing gluten.

Is sugar added to CITREVE products?

Most of our classic products do not contain added sugar. Certain signature products are intentionally prepared with sugar and other flavoring ingredients. Any added ingredients are clearly listed on the product label and product page.

Do CITREVE products contain preservatives?

Most of our classic products contain only the fruit or produce listed on the label, without added preservatives. Some signature products include additional ingredients such as sugar, salt, mint or vanilla bean paste. Always review the ingredient list on the individual product page or package for complete information.

What is the difference between freeze-dried and dehydrated fruit?

Traditional dehydration generally uses heat to slowly remove moisture, which can darken the fruit and produce a denser or chewier texture. Freeze-drying removes moisture while the fruit remains frozen, helping it retain more of its original shape, color and structure. Freeze-dried fruit is also lightweight, crisp when dry and able to rehydrate in liquid.

Frequently asked questions

Storage & Shelf Life

Keep your CITREVE products protected from moisture and ready to use.

Can I refrigerate CITREVE?

Refrigeration is not necessary and may expose the product to condensation. A dry, room-temperature storage area is generally the better choice.

Can CITREVE be stored behind a bar or in a commercial kitchen?

Yes, provided it is kept in a cool, dry location and protected from steam, splashes and humidity. Keep the jar away from sinks, dishwashers, ice wells and other areas where moisture may enter the container.

Does opening the jar change its shelf life?

Opening the jar exposes the product to humidity, so proper handling becomes especially important. Keeping the lid tightly sealed and preventing moisture from entering will help maintain the product’s quality.

How long do CITREVE products last?

Unopened, CITREVE products have a shelf-life of several years. Once opened, products have the ability to last for upwards of 9 months. For the best quality, keep the jar tightly sealed and store it in a cool, dry environment. Shelf life can be shortened when the product is repeatedly exposed to moisture, heat or humidity.

Why is it important to keep moisture out of the jar?

Freeze-dried products readily absorb moisture from the surrounding air. Exposure to humidity can cause the pieces to soften, become sticky or lose their crisp texture.

How should I store the product after opening?

Replace the lid securely after each use and avoid leaving the jar open for extended periods. Use clean, dry hands or utensils when removing the product so moisture is not introduced into the container.

How should I store CITREVE?

Store the product in a cool, dry place away from heat, humidity and direct sunlight. Keep the container tightly closed whenever it is not in use.

Does CITREVE need to be refrigerated?

No. CITREVE products are shelf-stable and do not require refrigeration when stored properly.

Using CITREVE

Explore ways to rehydrate, infuse, crush, garnish, cook and create with CITREVE.

Can I rehydrate CITREVE before using it in a recipe?

Yes. Place the product in water, juice or another compatible liquid until it reaches the desired softness. The amount of liquid and soaking time will depend on the product and recipe.

Can CITREVE be used as a snack?

Yes. Any of our products can be eaten directly from the jar. In fact, we have several customers that purchase our products for that exact purpose.

How many pieces should I use per drink?

The ideal amount depends on the product and the desired flavor and appearance. For sliced citrus, one slice is often enough for a single beverage. Smaller fruits and cubes can be portioned based on the recipe or visual presentation.

Can I use CITREVE for large-batch drinks?

Yes. CITREVE can be added to pitchers, beverage dispensers and batch cocktails. Test the quantity and infusion time beforehand because the flavor and color may become more pronounced as the fruit sits.

Can CITREVE be used in syrups?

Yes. It can be steeped in simple syrup or another liquid to introduce natural fruit flavor and color. Strain the syrup if a smooth finished texture is desired.

Can CITREVE be used for cocktail rims?

Yes. Grind the desired fruit into a fine powder and use it alone or combine it with sugar, salt or another dry ingredient. Lightly moisten the rim of the glass before dipping it into the mixture.

What is the best way to turn CITREVE products into powder?

Use a clean, completely dry blender, food processor, spice grinder or mortar and pestle. Grind only the amount you need and keep the remaining product sealed to protect it from moisture.

Can I grind CITREVE into powder?

Yes. CITREVE products can be crushed or ground into powder for drink rims, flavored sugars, seasoning blends, baking, sauces, syrups, frostings and other applications.

Can I cook or bake with CITREVE?

Can CITREVE be used in hot drinks?

Yes. CITREVE can be used in tea, cider and other hot beverages. Warm liquid may cause the fruit to soften and release flavor more quickly than cold liquid.

Does CITREVE add flavor to drinks?

Yes. As the product sits in liquid, it can release natural fruit flavor, color and aroma. The intensity will depend on the product, the amount used and how long it remains in the drink.

How long does CITREVE take to rehydrate?

Most products begin to rehydrate within approximately one to three minutes. The exact time depends on the product, the temperature of the liquid and the type of beverage being served. The warmer the liquid, the quicker the process.

How do I use CITREVE in a beverage?

Add the desired fruit directly to the beverage. It can be used as an immediate garnish or allowed to sit in the liquid so it begins to soften, rehydrate and release flavor.
