Slow Braised Umami Brisket Bites

The secret to winning any Super Bowl spread is a balance of rich fats and sharp acidity. We’re benching the standard BBQ sauce for a sophisticated 'umami' roster: bone broth for depth, tamari for salt, maple syrup for sweetness, and dried grapefruit for a citrus blitz that cuts right through the richness of the brisket point. It’s slow-braised perfection in a single bite! These are perfect as a standalone bite, added to nachos, or as the main star of a sandwich!

Ingredients:

1 Tbsp Extra Virgin Olive Oil
2 1/2 lb Beef Brisket Point - US Wellness Meats
1/8 cup Steak Seasoning - Primal Palate

2 whole Beef Instant Bone Broth - Bare Bones, packets
2 cups Water
1/3 cup Barrel Aged Tamari Soy Sauce - Jozo
4 whole Freeze-Dried Grapefruit Slices - CITREVE
glaze
1/4 cup Pure Maple Syrup

Process

  1. To Prepare:
  2. season room temperature brisket with steak seasoning
  3. add olive oil to a large dutch oven on medium high heat
  4. sear brisket for 3-4 minutes on each side.
  5. remove brisket from the pan and deglaze with water, beef broth packets, and tamari.
  6. add beef and grapefruit slices back into the dutch oven.
  7. transfer to the oven and cook at 275 for 3 hours.
  8. rest for 15 minutes and cube
  9. strain and mix remaining liquid with maple syrup.
  10. reduce on medium high heat for 10-12 minutes
  11. pour over cubed meat
  12. place in oven on broil for 3-5 minutes before serving
