Fermented Golden Citrus Ginger Honey

Ingredients:

- 1 cup raw, local honey
- 2 slices Citreve lime slices, minced
- 2 slices Citreve lemon slices, minced
- 4 slices Citreve orange half slices, minced
- 1 teaspoon ground turmeric 
- 1 1/2 inches fresh grated ginger

Instructions:

In a saucepan, slightly warm the honey and add in the remaining ingredients. Allow to warm together. Transfer to a jar, cover and store in a dark place for 2-3 weeks. 

If you have a fermentation/pipe kit, use that and the honey will burp by itself. If you are using a tight lid, open it daily to release any gas bubbles. 

This honey goes great in hot tea, sauces or even drizzled over baked sweet potatoes. Really the uses are open for personal creativity.
