this is the perfect no-fuss dip made with simple pantry staples. it’s fresh, zesty, & loaded with fiber from beans, veggies, & avocado — the kind of snack that actually satisfies.

Ingredients:
Dip
2 cups sautéed frozen vegetables (click for recipe), I used peppers, onions, & corn
1/2 cup Jalapeño Pepper, diced
15 oz Black Beans, drained & rinsed
15 oz Black Eyed Peas, drained & rinsed
2 - 3 Avocado, diced
1/2 - 1 cup Freeze-Dried Cherry Tomatoes - CITREVE, rehydrated OR sub cherry tomatoes
1/2 bunch Cilantro, finely chopped
1/2 cup Cotija Cheese, or queso fresco
Dressing
1 - 2 Tbsp Jalapeño Botana Sauce - Siete Foods, optional
1 - 2 Tbsp Lime Juice
1 - 2 Tbsp Apple Cider Vinegar
2 Tbsp Taco Seasoning - Primal Palate
1/2 tsp Cowboy Salt - Texas Salt Co., optional
1/4 tsp Red Pepper Flakes
