Cilantro Lime Chimichurri

Ingredients:

- 3/4 cups cilantro 
- 1/2 cup parsley 
- 2 teaspoons dried Mexican Oregano 
- 1 small shallot, chopped 
- 2 garlic cloves, chopped 
- 2 tablespoons red wine vinegar 
- 1/2 teaspoon kosher salt 
- 1/4 teaspoon black pepper 
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon ground cumin 
- 2 Citreve Lime slices 
- 1/2 cup avocado oil or your favorite oil

Instructions:

In a blender, add all ingredients except the oil. Pulse to process until well blended. Drizzle the oil into the blend and process until well mixed but not puréed. 

Serve the Cilantro Lime Chimichurri with roasted potatoes, top off your roasted chicken, whatever your heart desires!
